Just over 140 miles southeast of Athens, in the heart of the Aegean Sea, lies the sunbaked island of Paros: a tourmaline-watered oasis tucked away in the beautiful Cycladic Islands. Each summer, my brother, Nicholas, and I would spend the entire season enjoying the Paros sand and surf, soaking up our family’s native culture…and sampling the island’s glorious food again and again.

And again.

This summer tradition now travels across time and the Atlantic to your very own table through PAROS, Nicholas and I's latest culinary venture, proudly situated among the storied streets of Tribeca.

We created a menu that highlights fresh, daily imported seafood alongside a superior selection of Hellenic specialties, that takes me back to my ethnic roots, allowing me to share my curated take on authentic Greek fare with you—New York’s savviest diners.

The brothers Pagonis — George and Nick — were gracious enough to let me see inside their new Greek restaurant on West Broadway and Franklin, Paros Tribeca, which opens Thursday. The two have been working from morning to midnight for the past two weeks to get everything ready — the line cooks are there now, testing all the recipes.

This newcomer, in an airy white setting that evokes the Greek Isles, features seafood, some of it imported from Greece. Other specialties include slow-roasted lamb shoulder and grilled filet mignon kebab. It is owned by George and Nicholas Pagonis, brothers who are both experienced restaurateurs.

We don’t have the exact numbers, but New York City has a lot of really small restaurants where you can’t use your fork without bumping elbows with your neighbor. For that reason, when a particularly large restaurant opens, we take note. Paros is a 3,500 square foot Greek restaurant in Tribeca, where you can drink something called a Grecian-tini, and eat filet mignon kebabs or fresh fish flown in from Greece at a safe distance from the next table.

Restaurant Hospitality: New on the Menu
At Paros, which opened earlier this month in the New York City neighborhood of Tribeca, chef George Pagonis, who opened the restaurant with his brother Nicholas Pagonis, braises lamb shank in stock with cinnamon stick, bay leaves, allspice and peppercorns and then bakes it in a clay pot with orzo pasta. It’s garnished with grated mizithra cheese.
